Time Machine has been brilliant so far, I've used it to restore both client and server machines after disk failure. Did you know that to restore an entire system you need to be booted from the installer DVD for OS X and to choose "Restore from Time Machine Backup" from the Utilities menu?
Your Mac sounds hilarious, did you buy it from Groucho Marks? As for Preview being bad, it's not designed for anything more than viewing lots of different formats of document, basic editing and making PDFs, all of which it does beautifully. iPhoto allows you to arrange, catalog and edit photos, perhaps if it doesn't allow you to work in a particular way it's just that you haven't yet found the way to control it. If you're more specific I'm sure I can address any problems you have.
