I've only just noticed that when I click/hold on my Mail icon in the Dock the balloon that opens up has a 'Keep in Dock' item. When clicking on this the Mail icon stays in the Dock in the place I put it. I've no idea how this has happened to one of the standard Dock items but at least it has sorted my mobile Mail icon problem.
