If you don't mind using the Terminal then it's quite easy:

$ cd path/to/parent/folder
$ ls -R | pbcopy

This will put all the files in path/to/parent/folder and its  
subdirectories onto the clipboard. You can then just paste this into a  
word processor or spreadsheet.
