Could you provide a bit more detail? Did you scan a page(s) that included text 
and saved the result as a PDF? What sort of source media was it - book, 
magazine, newspaper, computer? It depends on the quality of the source but 
often you can select the text in Preview and copy/paste it elsewhere. I've 
found that the layout/formatting often gets lost and you needs to use the 
systemwide services to reformat the pasted results.

I assume that if you'd scanned it yourself that you had checked to see if the 
software that came with the scanner offered OCR. Jason is on the button that 
you need a good quality image to have any chance to convert the text. Certainly 
doesn't work 1970's typewriter material!
