have you tried 'Mailbox/take all accounts online?' can you edit it via the Preferences/Accounts/Account Information? I see a drop-down menu there of smtp accounts and if I select it I see 'edit...'
is it IMAP or Pop? if it's imap the stuff should all stay on the server if you delete the account but if it's pop you'll lose everything. it could be offline because it's not actually working...
