Ah ha! in that case the program for you is the rather useful MPEG streamclip - http://www.squared5.com/svideo/mpeg-streamclip-mac.html I have used it a lot for this purpose.
On the plus side MPEG streamclip is free... on the minus side, to open MPEG2 video (which is what DVDs are) you need the quicktime MPEG2 component which isn't free. Also you should copy the whole content of the disk to your hard drive first using a program such as mactheripper (free) to save wear and tear on your drive. Open the dvd in mpeg streamclip, select the tracks/chaper range you want to work with, and press file -> export to DV. I wouldn't de- interlace or anything like that since you are going to burn it to disc again at the end. You should have no problem opening the DV files for editing in iMovie, or final cut, and its the best quality video to use for what you are doing.
