Phillipe I've done this on my iPad but not the iPhone. The trick is to set it up as a standard IMAP account rather than a Gmail account and then once setup go and modify the address in the account information to be the alias (or aliases separated with commas) you want to send from. Your gmail address remains in the username for the incoming mail server.
