My 10.5 server (powerpc based) still works exactly as it did for me as a client, but I guess we all use different features. I have it doing light file serving, VPN, time machine destination, disk imaging & netboot. I don't bother with the update service anymore and have never bothered with open directory.
Ive never been a fan of apples "tiers" of user mode for server, ie. easy mode, medium mode and full access mode, maybe you picked the wrong tier at the start and are stuck in one particular role until you re-install it. Hopefully 10.7 doesn't behave like this. I remember lots and lots of things breaking in the 10.4 -> 10.5 upgrade, as NFS totally changed, and i think that was when webobjects disappeared too which caused some of our in house devs to keep people on 10.4 machines until they re-wrote their programs. @sevan, I have no trouble mounting my shares, definitely something strange going on there. Traditionally I've found that the server and client OSs all want to be at the same level when the server is doing office work, this is why I don't bother with the update service any more. But then again, you would have run into the same issue with 10.6 client connecting to 10.5 server if they were demanding parity...
