if you have certain things installed (like MacTeX) it can take forever. The record I heard was 36 hours at my university. It is very slow at copying lots of small files, apparently. My own, I left after about 4 hours and it was done in the morning. It said '2 minutes to go' for 3 of those hours.
This was on an SSD start-up on a 2010 Mac Pro - not exactly slow equipment.
