Does Dropbox Camera upload send them to Dropbox? That might be a pretty
seamless way to get them off the phone and onto the Mac.
I do that with my photos (never use videos) and just bypass the
still-unusable Photos [it has consistently created multiple duplicates
every time I sync, thousands of photos duplicated in a fortnight, and
I've never managed to stop it]

but I happened to notice that one of the images on the screen was the
first frame of one of the videos, I selected it, hit import, and the
video is now in the videos folder.

The phone gives me an option to upload my entire library to iCloud but
I do not want to do this as the library is too big and I don’t fancy
the potential cost.There is also an option to choose which video size
to use, but that’s about it.
In the Photo’s app on the Mac, I do not see any options either, and
when I connect the phone, the “On my device” only shows the photo
stream not the camera roll.
If i look in “videos” all the old vids are there but nothing since
Feb this year.

The iTunes sync settings only covers syncing photos/videos from the
Mac to the iPhone, not importing from the Phone to the Mac.
Importing’s all handled in the Photos app.
