I’ve got a star tech USB c dongle that has hdmi, Ethernet, sd card 2x old USB 3 and a usb-c port for power in. (No thunderbolt compatibility since it’s a non-pro MacBook). It works great and it’s in grey metal so matches the laptop.
I think a multi purpose adapter such as this plus a separate usb-c to thunderbolt only cable will be the best way to cover all the bases. At least you have more than one port in your laptop. As for multi display My office has Dell laptops and D6000 usb-c docking stations - quite expensive but it has 2x DisplayPort outputs, plus the usbs, Ethernet etc. That works too but a multiple displays broke with a Mac system update last OS and came back again with the latest release. I wouldn’t hold my breath that it wouldn’t break down in a future Mac OS update again... but I don’t rely on that device to to get stuff done, it’s a nice option available to me.
