I’m bang up to date on our M1 Mac mini and haven’t experienced anything like this. I did have some problems with the initial version of Big Sur but that was running from an external SSD via Thunderbolt. Since running on the internal storage it has been stable.
Personally I’d reinstall Big Sur which with APFS is straightforward. If the problem persists then there is some other factor at work.
