My impression is that end point adjustment limits the servo travel at full
stick movement, but that the control movement remains proportional to the
stick movement throughout the range. Therefore, you will still get
differential aileron movement throughout the full range of stick movement.

I have used both methods successfully.

There are some circumstances, at least on a JR388s which I believe is very
similar to the 8103, where you must use the end point method. For example,
if you want to use the free mixers to give a different amount of
differential for launch or landing, then the differential for normal flight
should be set with the end point adjustment.
