Again, the "pracitioner" - in this case, Obiwan and Luke were present,
and Obiwan was a Master - neither corrected him.  Also, what
non-religion uses terms like "Temples" to describe their holy sites?

In Episode 3 (as well as many expanded universe things, but Episode 3
is "Canon" - that's Lucas's word for actual Star Wars stuff) - Anakin
enters the "Temple" and kills all the Jedi and the Younglings.

It seems very much like a religion to me.

Besides, in the real world, Jedi is a recognized "religion" in the UK.
