See, the trouble is that we don't really know enough about the star wars universe (as seen in the movies) to really be able to tell. We don't know all the history behind the jedi, so we can only go on what the characters tell us, and they suggest that it's a religion (Han Solo and the General made such comments). We also don't know whether any world or country in the star wars universe gave the jedi religius status.
