I believe what happened is this: FB prompted him to invite his friends to join & when he agreed to do so, it scoured his address book and sent out individual messages to each email address in there. I haven't followed through on that step so I can't verify the complete process, but I did research it previously. Just because there aren't other emails listed in the To or CC fields, doesn't mean that it didn't happen that way.
Regardless, this is what the "Moderate" feature is for. If there are any doubts about someone, place them on "Moderate" so that any email message posted by them will have to be approved by a Group Moderator before it's posted to the group.
