Hi Manuel:

Using IPR to render, you can change the AOVs in Arnold render setting (Render View AOV) and restart the IPR render, this should update your IPR preview of what your selected AOV will look like. I usually just bind this to a key so I can fire it off without having to have the Render Settings tab open all the time when adjusting lighting.

I don't know of a way to get IPR in the viewport natively, although I know it can be done with custom plugin/scripts. Example:
