we never use the webinterface of google apps so we've never suffered
such a limitation.
Contacts added on the iphone or mac wirh multiple emailaddresses and
or phone numbers and or mail addresses are synved flawlesly.
This explains why we have such a different experience

Try to crate a new contacts with 4 e-mails addresses, 3 mobile
numbers, and a postal address in the gmail interface and see what you
are getting on your iPhone and you will understand the issue.
If you are only storing one or two numbers and email addresses per
contact, sure it works fine. Otherwise it is too limited.

Addresses are very badly mapped between Google and Exchange which
tends to corrupt the data, emails and phone numbers are only
partially
synced because of the Exchange data model -> have a look at my
previous post for details.

Google mimics Exchange if I'm not mistaken and that's what we use

it only works unreliable when i comes to pushing mail. So for
calendar
and contacts we use the Exchange option on the iPhones to connect

google apps and for email we use imap with pushgmail to get push
notifications when new mail arrives.

This is exactly the point, in this scenario Google Sync is not
needed
to achieve over the air synchronisation between google and all the
devices. Which is a blessing given how badly Google Sync works
with
the iPhone.
(I am sure your Android experience is better, but on the iPhone it
really isn't that much useable)

Ofcourse ... syncing all calendars is a must, with the right
colors a
nice to have (for me)
I had no trouble changing the colors in google's calendar to be
at
least close to the ones on my desktop. I'm not following why
this is
a big deal.
In my case, I use the google sync to keep my android phone up-to-
date,
and mobile me to keep my wife's ipod up-to-date. I've always
used
mobile me to sync my multiple desktops. Having an external
service
that did the sync between google and mobile me would be ideal, as
then
I would not have to worry so much about having the google sync
software on every desktop, and having to worry about mobile me
and
spanning sync fighting over entries which may differ on each
desktop
based on when the last mobileme sync happened.
That and I wouldn't need to leave one computer on all the time to
get
the entries on the phone to make it to the ipod.
