My thoughts:

8.14.1.2.5 does not apply at all, as you're describing composite wood joist construction, which by it's definition is not wood joist construction. See the annex A.3.7.1 (3) vs. A.3.7.1(5). Ask the sprinkler contractor to read both of those annex definitions and then explain why composite wood joist construction is to be regarded as wood joist. Also direct them to A.11.2.3.1.8(4)(b) for some further guidance. Additionally, 8.14.1.2.6 doesn't apply unless the architect amends the plans and provides the insulation noted in the section,
and shown clearly in Fig. A.8.14.1.2.6.

Also, make sure the contractor understands that if sprinklers are omitted from the combustible concealed space as you describe, once the insulation and fire stopping have been provided, the remote area must be increased to 3,000 square feet, per 11.2.3.1.8(3)
