Curious but what temperature sprinklers did you specify?   Sprinklers in ovens 
are not uncommon.  Take a look at NFPA 86 and FMDS 6-9.

Subject: Curing oven for reinforced plastic tanks.

We designed a sprinkler system for a gas fired curing oven for plastic tanks 
reinforced with carbon fiber and fiberglass.

The 10 - 40 gallon tanks hang from a conveyer. Zone temperatures vary from warm 
to 200-250*F. Cure is over 24 hours.

We show about 20 sprinklers but the owner is reluctant to have sprinklers in 
the oven and his insurance company agrees.

 

What say the forum.
