That said wouldn't the soffit rule apply for max distance from the edge of the soffitt if it extends up to the main ceiling or, as your question seems to imply to me, " The top of this soffit is approximately 5’0” below the overhead sprinklers...." it sounds more like a cloud abutting a wall than a soffit. I don't think the 48" rule applies at all.
