We sell hardware mainly. The easiest solution was to just create a dummy
number of software licenses as an inventory item, and let them naturally
decrement.

If you only sell software, think about using Projects.
Your sales are then processed via AR Transactions (with no link to
stock) and you allocate to the project.
Any purchases (including staff costs, overheads etc) can then be
processed via AP Transactions and also be allocated to the project(s)
(A cost can be allocated to one or more projects in the same transaction).
Thereafter, you can take out Profit & Loss statements in the normal
way, or for individual projects.
