My quick 2cents:  You are better off running qmail over sendmail due to
security and much better support for virtual domains.  Transition for me
was fairly easy, but not exactly straight forward.  Look at the life with
Qmail documentation for help: http://www.lifewithqmail.org/lwq.html

Also look at www.qmail.org.

In anycase, almost everything you ever need to know about qmail is in the
Life with qmail docs.
