FWIW, your box is more powerful than what my web host uses, and you have more than double the amount of RAM. I find that SM usually runs very well on my host. Now, we don't have 7000 mail users, but unless a large portion of your users all hit the accounts concurrently, I'd say your set-up looks good. With that many users, potentially many hitting at once, I'd be more concerned about your bandwidth and peering, as the box looks fine. Addendum: Ah, I just noticed you're using a single processor.
