in the case where the email just "disappears" randomly, is there a way to actually look at the /var/log/maillog for those instances? i can't imagine

Yes. Just look, and see. What exactly are you trying to ask?

tailing the log file and watching every email that gets sent out to confirm its delivery or disappearance..

i've included header snippets from the bounce emails (the first one contains the actual delivery error message):

X-Persona: <[EMAIL PROTECTED]>

I am not going to waste my time trying to figure out something when the relevant information has not even been provided, and has been replaced by random data. You are not "mydomain.com", so I'm going to stop right here.

If you want to provide some additional information that might be helpful, do that, instead of posting some randomly-generated messages that bear absolutely no relevance to reality. Also, as http://www.courier-mta.org/FAQ.html#help suggests: "the contents of any related configuration files." Routing-related issues cannot be identified, obviously, without knowing how you set up your server to route mail.
