Shrinkwrap from Aladdin software is a very solid, simple to use program. Just drag a CD to the Shrinkwrap icon and it will prompt you for the location to store the image, then make it including compression if you want. Click on the image file and it will mount just like the original was installed (unless they have antipiracy software that looks specifically for a CD, but there are ways around that too.). DiscCopy is still a free download from Apple, I think.
