Well, I finally did it. I got OSX running on my StarMax. It takes quite a bit of work, but it can be done.
The first thing to do is to upgrade the processor to a G3. The OSX code requires at least a G3. Now unfortunately my son's iMac died recently, so I used the G3 from it to upgrade my Max. A little tricky, but it was available and I hate to see hardware go unused. I suggest others use a standard upgrade.
Now the next part is to add memory. OSX likes LOTS of memory. With a little judicious soldering etc, one can add a memory bus extender to the Max to increase the memory beyond the normal limit. So now my Max has a full gigabyte of memory!
The last part was perhaps the cleverest part of all. OSX will not install normally on non-Apple machines. So even with all that, OSX would not install on a Max. Now it just so happens that I had a beta copy of Tiger installed on my son's iMac for testing purposes. Since his iMac died, I decided to try an experiment. I took out the HD with Tiger already on it, and installed the HD on the Max. Lo and behold, it booted up!
So now I am running Tiger on my Max!
