If you had a house in Italy and were to find an angel
there it would probably be marble. If it wasn't and be
executed in granite it would either be fairly new
(Western Europe only learned to carve granite about 120
years ago as it was too hard to efficiently carve it
with steel tools. We had to wait for the advance of
tungsten tipped tools.) or ancient Egyptian, in which
case it probably would have been Syenite or local
Egyptian granites.
A newer granite carving in Italy could be made of red or
white Sardinian granite (Sardo Bianco or Sardo Rosso),
which appears in abundant enough quantities to allow
even sculptors to afford it. Otherwise Italy isn't that
much of a granite country. You find diverse quarries in
the very north, but Italy mainly imports granites from
all over the world. The area around Cararra trades a lot
more granite from outside of Italy than it produces
itself.
But if your story has to have a romantic touch with
ancient times in Italy and you do not like marble then
you will have to look at sand- and limestones. These are
quarried in mainland Italy usually in smaller quarries
and you can find them where ever you want to place your
story. The best thing to do is probably identify, where
you want this angel to originate and look up the stone
directory, whether you can find any material under this
name.
