Yes, I tried just pressing enter at the password prompt,
but you get this:

# itadm modify-target -s 
iqn.1986-03.com.sun:02:7e969860-cb8d-475a-ddbb-97bf2f22ce7b
Enter CHAP secret:
Secret must be between 12 and 255 characters
itadm modify-target [-a radius|chap|none|default] [-s] [-S chap-secret-path] 
[-u chap-username] [-n new-target-node-name] [-l alias] [-t 
tpg-name[,tpg-name,...]] target-node-name

It would have been nice if it had just interpreted that as a request
to clear (unset) the CHAP secret.

I guess the other way for itadm to handle this is to have an additional
command, say -c, or whatever, to explicitly clear the CHAP secret.

It would be nice to fix this, and I guess not too difficult,
if you know what you're doing.

But I do not have the spare time to look at it, at the moment,
and I guess that the Sun people have more important bugs to fix!
