Same problem here!
I'm using ZFS Version 10 on a X4500 with Solaris 10 5/08
as backup device for VMs from an VMware-ESX server via NFS.

After copying the data and deleten the full ZFS it filled up again.
 
pfiles does not show any unusual large numbers of open files on the NFS 
processes. As the space isn't freed after reboot, the only remaining culprit 
for having open files might be the NFS lockd, but pfiles doesn't show any open.
