If the particle density of the fuel is determined (g/cc) and you know the weight of fuel packed in a known volume you know the volume of voids and can determine the air speed - I am thinking. I think in gasification they use the term "superficial velocity" a fictional speed derived from the air volume and cross section of the chamber, the actual speed of any given bit of air flow through the spaces will be much higher of course.
