On one hand, it would be good to have common standards to facilitate interstate commerce -- that's the purpose of the Commerce Clause. One the other, it would be good to allow states to have their own standards and sell the eggs within their boundaries only. Why do I believe that? Because the single most environmentally-friendly thing that most people can do is to buy as much of their food locally as possible. Besides, I'd rather buy day-old California eggs than two- or three-day old Iowa eggs.
