I've been doing my part to interrupt the flow of pink slime into this country
by purchasing the chicken parts before they are shipped to China. When I first
contacted the CEO of one company I buy from, and asked him where all his
offcuts went, he was floored - he had no idea, and had not thought to ask. When
he found out that they were all being sold to China, he called back, fairly
well furious, because he had taken a few days to follow the chain, and learned
that the McNuggets he bought were actually coming from his company. They were
taking a circuitous route to China to be mechanically separated, turned into
pink slime, and then shipped back. This fellow had been in business for a long
time, and had not been keeping track of every contract his company had. His
lengthy explanation of what he had learned was not news to me - I knew what was
going on before I called him. When he finished and I said "yes, this is what's
been happening to US grown meat over the last few decades," he was astonished.
He has since then been quite amenable to selling me whatever I ask for, and has
lowered his minimum purchase weight to 500lbs to accommodate the small size of
my business. He told me last month that whenever I'm ready to grow, he's ready
to kill off those contracts. I can't use all of what he discards in this way,
but keep working on other ideas.

Ironically, some of the things big agriculture have been pushing for will
eventually mean that our meats and produce will not be exportable at all.
Except to China.
