I had the same questions, found a simple solution. I have managed to
train my better half to scan using our HP multifunction printer/scanner
via its built in web interface (it's a network capable model) - I've
just set up a bookmark in her web browser. That of course means that
you will need to buy a different scanner, but they're getting cheaper
and cheaper nowdays...
USB won't work for what you are trying to do
