ADS refuses to recognize FW drives at all. It's not the same issue as with certain SCSI drives and most removable media. If you can remove the drive from the FW enclosure and attach it either to IDE class bus then ADS will format it, and you can replace it in the FW enclosure with no problems. You still won't have the ability to tweak the throughput, but then again you probably won't need to ;-)
Else you can use Apple's Drive Utility [ADU] from OS X 10.2.3 or later to format and partition the drive, being sure to check the OS 9 driver compatibility box, if desired.

I am working to get my S900 moved up from 9.1 to 9.22. I like your idea of using the ADU from OX-X but can't figure out how to do so as I prefer not to hack it. I have a PB G4 that I can use but I probably need to connect directly as a firewire drive as I have a firewire card in the UMAX. BTW I have the original 4G HD and a second 4G as a backup. Once I get 9.22 on one I would upgrade the other.
