Can't help you with the Panther/XPostfacto issue, but to remove a Zip disk
out of the drive (when it's turned off to be safe) you can take a sharp
pointy object (I use a paper clip that has been straightened out) and push
it through the tiny pin-sized hole that you should see somewhere near the
disk slot on the front of the drive.
