This is easily controlled by the user. At the right end of the column headings, there's a funny-looking little icon (I never did figure out what it was supposed to be) with no content beneath it. Click the icon and you can toggle on/off any of the various column headings; the one in question here is "Junk status." Your test profile evidently has it because that's the default. My column headings don't include "Recipient" because I turned it off; my preferences are Subject, Sender, Date, Status, Lines. YMMV.

If you want the columns to appear in a different order, simply drag/drop the headings to where you want them. Resize by dragging the dividers.

I'll leave the rest of your issues for others to address.
