I know of no way to do this while sending, but sounds like a good feature request. However you can indeed delete or detach the attachment(s) from individual messages. From within the message header pane, right-click on the attachment & you'll see the options. Or click on the msg and select 'Message|Attachments'. I find that sorting the message by size allows me to easily spot the one's that are taking up the most disk space.
