SeaMonkey Mail uses code from Thunderbird. There is no GUI there either.

Ah interesting so this would be a Thunderbird issue.


Well, you could go to your Account Settings and change it in
"Composition & Addressing".

No, you set how you want to compose email in your Account Settings in
"Composition & Addressing", and that is what you use unless you change it.

That would be a pain to go back and forth. I will use the hidden hot key trick. :)
