and if you look closely, you'll see the text layout is the same. HTH
That's how HTML mimic a plain text delimiting signature - SM and
perhaps also other mail-client did not see this as a valid délimiter.
Because a valid delimiter is a line containing only "-- " followed
by the CRLF pair which ends the line.
It strips the signature when I Reply to a Content-Type:
multipart/mixed email, but not for "Edit as New" and "Forward".
It doesn't work when composing to a Content-Type: text/html email, or
plain-text email. For me, it's an enigma, more than an annoyance.
When i do a reply of a received post in a "test" newsgroup - the
signature is not dropped. See hereafter

That's the behaviour I get also, ~ that it doesn't work when replying to
a Content-Type: text/html.
