Sorry, no, there is nothing in "Extensions" .. The dictionary is present
in "Dictionaries" where full infos are:
Dictionaires français 5.4.1

The only options are: "Disable" or "Remove".

Issue about the preselection of one of these dictionaries
It is wrong that one of these dictionaries has priority over all others. There is no presetting within this extension. Firefox should always remember the last dictionary you used. If it doesn’t work like this for you, the issue comes from somewhere else (corrupted profile, Linux distribution mess, another extension ?). It’s pointless to complain about this matter in the comments. If you don’t believe me, unzip the xpi file, you’ll find no code to prioritize one of these dictionaries.

I see in Edit | Preferences... that all four French dictionaries are listed, not one with options, so you're right, your selection should stick. Unfortunately, SM tends to be forgetful in this area; several users (including me) have complained about it. Sorry/Désolé.

I CANNOT SELECT .....
I have clicked on "More" then rigth-click ... Tell me where i can do what you explain with that screen-copy:

I have installed ONLY ONE dictionary The French one which is divided in 4.
