You can set SM to do this automagically:

Correct. But the routine you advised was to delete the junk and then
empty the trash. Isn't it better to have SM routinely empty the trash
than to devote valuable brain time to remembering and doing it?
I personally avoid doing unrecoverable actions automagically. Antiques
Roadshow has illustrated that many times ;/
Fine. That's why I suggested the Junk aging process -- you have a week
to reconsider before a given message is purged. If it's junk and you
haven't changed your mind in a week, you're not gonna change your mind.
