Rachel,
When you edit a layout, you must make your own HARD line breaks by pressing
the [Enter] key when you want the line to break.
In my experience, layouts do not have the nice feature of 'Automatic Wrap'
that you see in a work processing package.
This is probably good for those working with unusual page sizes or working
with online screen layouts vs. printed layouts such as the available thank
you letters.
As for fitting the layout on the page, ensure you have the 'Rulers' turned
on. This makes it easier to fit things on the page in the correct
location.
Once changes are completed, print out a test copy of the letter and make
sure it prints as required.
Remember to right click on the desired field to see the available options
including formatting the field's default look and behaviour.

running off the right margin of the page. I couldn't seem to drag the
