I'm not sure I follow what you did here, to get "envelopes" to show 
up in the popup list. The layout you see when you print envelopes is 
called "Envelope (#10)"

If you go to layout mode, select the layout mentioned above, and 
check the box to show it in the layout menu, it will appear in the 
popup. This is a preview screen. To print the envelopes from this 
layout, you click the black Envelopes button and it will jump to the 
layout envelopes - Portrait and print envelopes for the found set.
