I'm using a PC, so I can't comment on the Mac approach; and my setup is very specific to my interface, which is an E-MU 1616m. I have set up Windows sound to use the multichannel output mode of the E-MU interface ( which is done using the sound applet in the control panel). In PatchMix (the control program for the E-MU) I pick out the front and rear channels of the 5.1 that is being sent to the interface for playing, and route them to four inputs of the alternate ASIO driver (as well as to the speakers). These ASIO inputs I can then pick up with any handy audio program - Reaper, WaveLab, or my favourite for doing this: AudioMulch.
