I've done it with a Palm handheld, and anything that can do true networking
over serial (SLIP/PPP) should work like a champ. I'm not aware of a
DOS/Win-compatible version of the Linux PLIP (I think that's it -- IP over
parallel ports), but I haven't looked in a LONG time.

I almost had my Mac SE going to the Linux box, but ran out of time.

I'd be happy to share my Linux config files for pppd, since they can be
confusing at first.
