When I installed Symfony I used go-pear.php to install pear via these instructions.
http://www.playingwithwire.com/2007/10/installing-symfony-on-os-x-leopard/ As for mysql. Mysql 5 for 10.4 package on the Mysql downloads works fine in Leopard I use it every day. I think it would be great to have more than one including yours. One for users who aren't so advanced, or who don't want to compile things from macports or fink on their mac (like me), and one for people who want to be able to customize their installation and have use of things like GD or PhpMagickWand, and other things not included in the Apple version of Apache.
