If you decide to work with cross-stitch, you will
probably want to translate the graph on paper first -
the long double-face "pixels" don't readily adapt to
the square cross-stitch pixels.  I use a program
called PatternMaker, which was originally designed for
cross-stitch, but you can adapt the shape of the
"stitch" so that the fabric is elongated.
Since I'm new to this list (or rather, returning after a long absence), this might already have been mentioned, but there is graph paper for knitters in which the shape of each "square" is elongated b/c that is the shape of the knitted stockinette stitch. Knitter's graph paper is pretty widely available--certainly in knit shops and probably on the web, too.
