Hi, to turn off html composing, go to Tools > Account Settings, then choose your account in question, make sure the tree view is open, arrow to composition. Now tab to the check box which is composing in html and uncheck it.

I'm not sure about message deletion since I just empty my trash from time to time.

Oh, and of course with the recent versions of software, turning message threads. One last thing, you might want to turn off the preview pane, toggled with F8 or from the View/Layout menu.
