It's also worth taking that idea about 'user-defined global variables'
further - I think you could consider this as some kind of
configuration of the workflow itself.

Almost like a workflow input port, but which would not normally be
exposed as a real input to the workflow, and which could have a saved
value.

I would not prefer the $variable metaphor as it means undeclared data
flows in a data-flow driven language, but we could keep the
configuration data processors (or just one processor) as a group
similar to the input port - and make it editable by selecting the
workflow or showing it in the Run dialogue.
